Lucy routinely REQUESTS green beans for breakfast. I'm totally with you on that one. Feed them what they'll eat.
Cheese = Protein, Bread = Grain/Carbs, Green Beans = Veggie. Sounds healthy to me.
I grew up eating leftover spagetti, baked potatoes, and egg salad sandwiches for breakfast. I was in high school before I realized that I wasn't normal. :)
Oh my heck! I would MUCH prefer that my kids eat that (and what a balanced meal!) than the sugar cereals they request all too often! (i admit it's my own fault that we have fruit loops in the house right now...but usually it's Joe's fault :)
That is at least as healthy as oatmeal. I vote encourage it!
